How do you know if everything is true in a nonfiction book?

Question by ...: How do you know if everything is true in a nonfiction book?

I'm reading a nonfiction book with dialogue, but how does someone know everything someone says? Do the authors really remember every single thing people say. Non fictions are true stories, so is the dialogue, word for word, what they really say? or something similar?

I'm asking if the words in quotes are the exact things the people had said.
